Vegetables and Tomato Pasta

Ingredients:

  • 80g angel hair pasta
  • 50g mushrooms
  • 50g baby corn
  • 30g tofu skin
  • 2 tomatoes
  • 20g basil
  • 10g shredded cheese
  • 20g salad greens
  • 1/4 tsp salt
  • 1 tbsp olive oil
  • Pinch of black pepper

Directions:

  1. Slice the mushrooms. Cut the baby corn, tomatoes, and tofu skin into pieces.
  2. Sauté the mushrooms until fragrant. Then, add the corn, tomatoes, salt, and black pepper.
  3. Pour in some water, and when it boils, add the pasta and the tofu skin. Cook for about 3 minutes.
  4. When the pasta is cooked, drizzle olive oil on top and add the basil and cheese.
  5. Before serving, add the salad greens tossed with olive oil on top.
