Italian Vegetable Soup

Ingredients:

  • 100g tomato purée
  • 40g carrot
  • 40g daikon radish
  • 30g celery
  • 1 bay leaf
  • Pinch of Italian spices
  • Pinch of paprika
  • Virgin olive oil
  • Salt, to taste

Directions:

  1. Cut carrot, daikon radish and celery into dices.
  2. Sauté the diced ingredients with olive oil, then add Italian spices, paprika and tomato purée.
  3. Add bay leaf and water, then simmer until cooked through.
  4. Season with salt and serve.
