Sweet Potato Cheese Croquette


For the croquette:
  • 200g sweet potato
  • 100g potato
  • 50g carrot
  • 50g edamame beans
  • 20g Grana Padano cheese (grated)
  • 30g butter
  • 30g whip cream
  • 50g cheddar cheese (grated)
  • 50g mozzarella cheese (grated)
  • 50g flour
  • 2 eggs
  • 100g fresh breadcrumbs


For the salad:
  • 5 red cherry tomatoes
  • 5 yellow cherry tomatoes
  • 2 white button mushrooms
  • 30g baby spinach
  • 50g oakleaf lettuce
  • Virgin olive oil
  • Balsamico Vinegar
  • 30g mixed nuts


  • Salt, to taste
  • Black pepper, to taste


  1. Boil and peel sweet potatoes, potatoes and carrots. Add edamame beans, salt, black pepper, grated Grana Padano cheese, butter, whip cream and mash everything into paste.
  2. Stuff cheddar cheese and mozzarella cheese into 30g of paste and shape into round balls.
  3. Dip balls in the following order: flour, beaten egg, breadcrumbs.
  4. Deep fry balls in 170 degrees hot oil for 3 to 4 minutes and the croquettes are done.
  5. Cut cherry tomatoes in half and slice the mushrooms.
  6. Season baby spinach and oakleaf lettuce in a bowl with salt, pepper, olive oil and Balsamico vinegar.
  7. Add the cherry tomatoes and sliced mushrooms into the salad, place the croquettes, sprinkle some mixed nuts and serve.
