Fruit and Vegetable Rice Salad

Ingredients:

  • 100g red quinoa
  • 50g corn kernels
  • 50g edamame
  • 100g beef tomato
  • 1/2 yellow bell pepper
  • 1/2 red bell pepper
  • 100g apple
  • 100g pineapple
  • 1 orange
  • Fresh mint
  • Fresh parsley
  • 1/2 head of romaine lettuce
  • 3 servings of cooked rice
  • Vegetarian pork floss
  • Salt, to taste
  • Sugar, to taste
  • Olive oil, to taste

Directions:

  1. Steam the quinoa and rice separately until cooked, and set aside.
  2. With a knife, zest the orange by removing its outer rind (not including the white pith) and mince the zest.
  3. Peel, core, and dice the apple. Dice the flesh of the orange, pineapple, bell pepper, and tomato. Chop the mint and parsley, and shred the romaine lettuce.
  4. In a bowl, mix the chopped fruits and vegetables, corn, edamame, quinoa, and rice. Add olive oil, salt, sugar and mix everything together.
  5. Sprinkle vegetarian pork floss on top before serving.
